Baconed Hominy

Ingredients

  • 8 strips bacon, diced
  • 2 lbs cooked hominy
  • salt and pepper
  • green onion, roughly chopped
  • 1 cup grated sharp cheddar cheese
  • Extra cheddar, bacon, and/or chiles for sprinkling

Preparation

Step 1

In a large pan, fry the bacon pieces until browned and crisp.

Add the hominy, salt and pepper and cook stirring constantly 6-7 minutes.

Add cheese, green onions and continue cooking until cheese is melted.

Pour into casserole dish and bake at 350 degrees until golden brown.
