Turkey Chili

Ingredients

  • 1 big onion chopped
  • 3 stalks celery diced
  • 1 big green pepper diced
  • 2 pkges ground turkey (@ 1 lb. each)
  • 2 - 28 oz. tines choped tomatoes,
  • 2 - 19 oz. tins kindney beans
  • @ 2 Tbsp. chili powder
  • 1/4 tsp.cayenne pepper
  • 2 Tbsp. cumin
  • 1 Tbsp. oregano
  • 1 tsp. salt
  • 1 can niblets corn (opt.)
  • 1 container "fresh" salsa (from the deli section)

Preparation

Step 1

Make this the day before you want it. It tastes even better!
Saute the onion in a litlle olive oil in a big pot until opaque. Then add the celery and green pepper and cook for a bit longer. Remove veggies and brown the turkey. Add back the veggies and put in all the canned goods, salsa and spices. Bring to a boil. Taste and add more cayenne or chili powder if necessary. Reduce the heat and simmer for about 20 minutes, stirring occasionally.
