Ingredients
- 1 loaf French bread sliced into 1/2 inch slices
- 1 pkg (8 oz) low fat cream cheese
- 2/3 C (.66 C)skim milk
- 1 C low fat sour cream
- 1/3 C maple syrup
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1 tsp nutmeg
- 2 C egg substitute
- 2 C fresh or frozen blueberries
- Powdered sugar

- Sauce ingredients
- 1 C sugar
- 2 T cornstarch
- 1 C water
- 1 C blueberries (or any berry or mixture of berries)or more if you like more berries in the sauce
Preparation
Step 1
- Place to fit in bottom of a 13 X 9 pan approx 12 slices of bread - squeeze together, cutting to fit as neccessary
- Combine cream cheese, milk, sour cream, yogurt, syrup, vanilla, and spices with blender, food processor or mixer until well mixed
- Add egg substitute until smooth; pour 1/2 of egg mixture over bread; sprinkle with blueberries
- Top with remaining bread and egg mixture
- Cover and refrigerate for 8 hours or overnight
- Remove from refrigerator 30 min before baking; cover and bake at 350° for 40 min; uncover bake additional 30 - 45 min. until knife inserted in center comes out clean
- Let stand 10 min before cutting; dust with powdered sugar
- In saucepan mix sugar and cornstarch; add water and boil 3 min.
stirring occasionally; add berries and simmer 8 - 10 min. Serve over French toast
