Raspberry Mango Salad

To make this salad, you can use arugula with spinach, Bib or Boston lettuce.

Ingredients

  • 2 cups arugula
  • 2 cups lettuce or baby spinach
  • 1 cup diced mango
  • 3/4 cup fresh raspberries
  • 1/2 cup (1 1/2 ounces) crumbled blue cheese
  • 1 tablespoon each of olive oil, water and raspberry vinegar
  • 1/8 teaspoon each salt and pepper

Preparation

Step 1

Mix argula, lettuce, mango, raspberries and cheese in a medium bowl. Shake remaining ingredients in a small jar. Pour dressing over salad; toss to coat.
Serve immediately.
