Coconut shrimp

Ingredients

  • 3 t cornstarch
  • 1/2 tsp salt
  • 1 1/2 c unsweetened coconut flakes
  • 1 1/2 c panko
  • 3 large egg whites
  • 1 1/2 lbs extra jumbo or colossal tail on shrimp, peeled, deveined and patted dry

Preparation

Step 1

1) preheat oven to 400. line baking sheet with parchment. place corn starch and salt in ziplock bag. place coconut and panko in second ziplock, breaking up any clumps. whisk egg whites in shallow bowl til foamy.

2) place shrimp in cornstarch bag and shake til coated. dip shrimp a few times in whites. shake off excess and put in coconut bag. shake til coated. place in single layer on baking sheet, bake turning once til coconut is golden, about 15-20 minutes. serve immediately
