Corn on the Cobb

Ingredients

  • Corn on the cobb
  • 1/2 cup (125 mL) softened butter
  • 2 tbsp (30 mL) chopped fresh cilantro
  • 1 tbsp (15 mL) lime juice
  • 1/2 tsp (2 mL) each: grated lime rind and chili powder

Preparation

Step 1

Drop the corn into a large pot filled with boiling salted water.

Cover the pot and let the water return to a boil again for 3 minutes
Remove the corn cobs with tongs.


Chili Lime Butter: Combine the following ingredients and spread over hot corn.

softened butter
chopped fresh cilantro
lime juice
grated lime rind and chili powder

Makes about 1/2 cup (125 mL).
