Blueberry Pie

Ingredients

  • 1-1/4 cups whole milk
  • 2 beaten egg yolks
  • 1 cup sugar5 tbls cornstarch
  • 1/2 tsp vanilla
  • 2 tbls butter
  • 4 cups blue berries
  • 1 tbls lemon juice
  • 1 deep dish 9 inch pie shell cooked

Preparation

Step 1

In 2 qt saucepan mix milk, eggs,1/4 cup
sugar & 2 tbls cornstarch. Cook over med heat. Stir until boiling & thickened. Stir in vanilla & 1 tbls butter. Transfer custard to shallow dish. Cover w/plastic wrap. Refrigerate 2 hours. In 3 qt saucepan stir in 1cup berries, 3/4 cup sugar, 3 tbls cornstarch & 1 cup water. Heat to boiling over high heat. Cook for 2 minutes stirring to thicken. Stir in lemon juice & 1 tbls butter. Allow to cool. Stir in remaining berries. Spread cooled custard from refrigerator in pie shell & top
with berry mixture. Refrigerate at least 3 hours to set.
