Cornbread Salad

Ingredients

  • Mix together:
  • 8 1/2 oz pkg cornbread muffin mix
  • (cooked according to pkg directions)
  • 10 slices bacon cooked crisp and crumbled
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups ranch dressing
  • 2 cans pinto beans, drained and rinsed
  • 2 cans whole kernel corn, drained
  • 1 cup chopped bell pepper, green and/or red
  • 1/2 cup chopped green onion
  • 3 large tomatoes, chopped (about 3 cups)

Preparation

Step 1

In 4 qt. glass mixing or salad bowl:
Layer ½ cornbread, ½ bean mixture, 1 cup cheese, ½ bacon. Spread with all of ranch dressing. Repeat layers and garnish with more chopped green onions.
