Ingredients
- 1 cups Flour
- 2 tb flour
- 1 1/4 cups sugar
- 2 tb sugar
- 1/2 cup butter
- 2 8 oz packages cream cheese
- 2 eggs
- 1 cup sour cream
- 1 tsp vanilla
Preparation
Step 1
Combine 1 cup flour with 1/4 cup sugar and butter Mix with fork or pastry blender until crumbly and pat into 9 inch spring form pan.
In medium bowl, combine rhubarb, 1/2 cup sugar and 2 T flour. Pour over crust and bake at 375 degrees for 15 minutes
Combine cream cheese, 1/2 cup sugar till creamy. Add eggs 1 at a time and beat well. Pour over hot rhubarb in pan and reduce heat to 350 degrees. Bake 30 min or til filling is set.
Combine sour cream, 2 T sugar and vanilla and spread over hot cheese cake. Let cool completely and chill in refrigerator.
