Ingredients
- 1 c sugar
- 1 T butter, softened
- 2 eggs, separated
- 1 c milk
- 3 T all purpose flour
- 1/8 t salt
- 1/4 c lemon juice
- 2 T grated lemon peel
- 1 unbaked pie shell (9in)
- whipped cream, lemon and mint optional
Preparation
Step 1
Preheat oven to 325.
In a large bowl, beat sugar and butter until well blended. Add egg yolks one at a time, beating well after each addition. Add milk, flour and salt; mix well. Stir in lemon juice and peel; set aside. In a small bowl, beat egg whites until stiff peak forms. Gently fold into lemon mixture.
Pour into pie shell. Bake 1 hour or until lightly browned and a knife inserted comes out clean. Cool and garnish if desired. Store in frig.
