Roasted Tomatoes, Sausage and Gnocchi

Very quick meal that you throw all the ingredients into one roasting pan and then add refrigerated gnocchi when done.

Ingredients
- 1 lb. sweet italian sausage links cut into bite size pieces
- 3 pints cherry tomatoes
- 2 bay leaves
- 2 cloves of garlic
- 1 large onion cut into chunks
- 2 tbs. extra virgin olive oil
- 3 tbs. basalmic vinegar
- 2 tsp. italian seasonings
- 2 packages refrigerated potatoe gnocchi
Preparation
Step 1
Heat oven to 425 degrees. Place first 6 ingredients into roasting pan mixing together to incorporate ingredients.
Roast for 55 minutes.
Cook Gnocchi according to package directions add to roasting pan. Mix to incorporate.
Serve.
