Ingredients
- Filling:
- 2cups2 cups strawberries
- 3tablespoons3 tablespoons coconut palm sugar
- 1tablespoon1 tablespoon arrowroot powder or non-GMO corn starch
- 1teaspoon1 teaspoon lemon juice
- Crust:
- 1/2cup1/2 cup oat flour
- 1/4cup1/4 cup rolled oats
- 1/4cup1/4 cup almonds, chopped
- 1tablespoon1 tablespoon coconut palm sugar
- PinchPinch Salt
- 1/4teaspoon1/4 teaspoon cinnamon
- 1/8teaspoon1/8 teaspoon nutmeg
- 1/8teaspoon1/8 teaspoon ginger
- 2tablespoons2 tablespoons coconut oil
- 3/4teaspoon3/4 teaspoon vanilla
Preparation
Step 1
Preheat oven to 375°F.
Filling:
In a bowl, mix strawberries, coconut palm sugar, arrowroot powder and lemon juice. Put into a small baking dish. Set aside.
Crust:
In a bowl, mix oat flour, rolled oats, almonds, coconut palm sugar, salt, cinnamon, nutmeg and ginger. Cut in the coconut oil with a fork until the size of peas. Add vanilla and mix until just combined. Spoon over strawberry filling.
Bake 25 to 30 minutes.
Serve hot with a scoop of coconut ice cream or vanilla ice cream.
