Bean Bacon Chowder

Ingredients

  • 8 slices bacon, cut up
  • 1 cup chopped onion
  • 2 tbsp. flour
  • 3 cups milk
  • 2 medium potatoes, peeled and diced
  • 1/4 tsp. dried thyme, crushed
  • 1 can (22 oz.) baked beans
  • Salt & pepper, to taste
  • 1/4 cup snipped parsley, optional

Preparation

Step 1

In saucepan, cook bacon and onion until onion is tender and bacon is lightly browned. Blend in flour and add milk gradually; cook and stir until bubbly. Add potatoes, beans, thyme; salt & pepper to taste. Simmer about 15 minutes, until potatoes are tender.
