Ingredients
- 1 C potatoes, peeled and grated
- 1 egg
- 1/4 C bread crumbs
- 3 T onion, chopped
- 1/2 C sharp cheddar cheese
- 1/2 tsp salt
- 1/4 tsp pepper
Preparation
Step 1
Preheat oven to 400*. Spray a mini muffin tin with non-stick spray.
Combine all ingredients in a bowl.
Spoon one table spoon of potato mixture into each mini muffin.
Bake for 18 minutes until tops are just golden brown.
