(Crockpot) Corn Chowder

Ingredients

  • 6 slices bacon, diced
  • 2 c. potatoes, peeled and diced
  • 2 10-oz. pkgs. corn kernels, frozen (or 2 cans)
  • 1 can cream-style corn
  • 1 med. onion, chopped
  • 1 rib celery, chopped
  • 1 sm. red pepper, diced
  • 1 14 oz. can chicken broth
  • 1 to 2 cups milk

Preparation

Step 1

In a skillet, fry the bacon until it is crisp. Remove the bacon and reserve the drippings.
Add the onion and potatoes to the drippings; saute for about 5 minutes. Drain well.
Combine all the ingredients in the crockpot, and stir well. Cover, and cook on Low setting for 4 to 7 hours.
