Chunky Potato Soup

Ingredients

  • 4 medium potatoes (about 2 pounds) peeled and cubed
  • 3/4 cup chopped onion
  • 1 carrot, chopped
  • 1/4 cup chopped celery
  • 1 1/2 cup chicken broth
  • 3 T butter
  • 3 T flour
  • 2 1/2 cups milk
  • 1 T minced fresh parsley
  • 3/4 t salt
  • 1/2 t pepper
  • 1 cup shredded Swiss cheese

Preparation

Step 1

In large saucepan, combine the veggies and the broth. Bring to a boil. Reduce heat, cove and simmer for 12 - 15 min. lightly mash. Meanwhile, in a small saucepan, melt butter; stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook for 2 minutes or until thickened. Stir in potato mixture. Add parsley, salt and pepper. Remove from heat and stir in cheese until melted
