Ingredients
- 4 ripe medium bananas (24 oz.), mashed - use 2 C
- 1 C unsweetened applesauce
- 1 stick margarine, melted
- 1 C sugar (may use 1/2 - all Splenda)
- 2 eggs + 2 egg whites (or 1 C Eggbeaters)
- 2 tsp vanilla
- 2 C flour
- 2 C whole wheat pastry flour
- 1 T baking powder
- 1 tsp. baking soda
- 1 tsp salt
- 1 tsp. cinnamon
- 2/3 C chopped nuts
Preparation
Step 1
1. Spray 2 loaf pans. Preheat oven to 350
2. Combine margarine, applesauce, sugar. Blend in eggs and vanilla.
3. Combine dry ingredients in bowl and add to margarine mixture alternately with bananas, mixing well after each addition. Stir in nuts.
3. Bake for 55 - 60 min. until pick comes out clean. Remove from oven; cool 5 min. and remove from pan.
