Black Bean & Corn Salad/Relish

Can be used as a dip, side dish, or relish for fish dishes....

Ingredients

  • 1 can Summer Crisp Corn (drained)
  • 1 can Progresso Black Beans (drained)
  • 1 large Red Bell Pepper (finely diced)
  • 1/8 cup Olive Oil
  • 1/8 cup White Wine Vinegar
  • 1 Tablespoon Lime Juice
  • 1/2 teaspoon Sugar
  • 1/4 teaspoon Sea Salt (coarse)
  • Pinch Onion Powder
  • 1/8 cup chopped Cilantro
  • Recipe can be doubled or tripled

Preparation

Step 1

In large bowl, whisk together oil, vinegar, lime juice, sugar, salt and onion powder until well blended. Add corn, black beans, peppers and cilantro. Stir to coat well. Cover and refrigerate at least 30 minutes to allow flavors to blend.
