Chili and Basil Chicken Noodle Stir Fry

Ingredients

  • 1 6 oz pkg Japanese noodles, such as soba
  • 3 T soy sauce
  • 2 T lime juice
  • 1 T chili garlic sauce
  • 2 T fish sauce
  • 1 lb thinly sliced chicken breast
  • 1/4 c chicken broth
  • 1 t cornstarch
  • 1 T canola oil
  • 3 green onions
  • 1/3 c fresh basil

Preparation

Step 1

Cook noodles and keep warm. While pasta cooks, combine soy sauce and next 3 ingredients. Combine chicken and 2 T soy sauce mixture. Add broth to remaining soy sauce mixture and set aside. Heat oil in skillet over medium high heat. add chicken, cook 5 minutes until done. Stirring occasionally. Add noodles and soy sauce mixture, cook 1 minute until sauce thickens. Top with green onions and basil. 4 servings, about 1 cup 327 calories.
