Holiday Cauliflower

Ingredients

  • 6 c. water
  • 6 c. cauliflower
  • 1 (4oz) can mushrooms, drained
  • 1/4 c. green pepper, chopped
  • 1/4 c. butter
  • 1/3 c. flour
  • 1/4 t. salt
  • 2 c. milk
  • 1 c. swiss cheese
  • 2 T. diced pimento

Preparation

Step 1

In large saucepan bring water to boil. Add cauliflower, cook 4-6 minutes. Drain & set aside.

In another saucepan, cook mushrooms & green pepper in butter. Stir in flour & salt. Add milk all at once. Cook & stir until bubbly. Remove from heat. Stir in Swiss cheese & pimento until cheese is melted.

In 1 1/2 qt. casserole, place half cauliflower, cover with half sauce. Top with remaining cauliflower and sauce.

Bake uncovered 325 for 15 minutes.
