Roasted Cherry Tomatoes with Blue Cheese

This starter has it all -- the sweetness of the cherry tomato and the smoky flavor of the cheese.

Ingredients

  • 1 Pint Cherry tomatoes
  • 1 Garlic clove (minced)
  • 1/2 cup Bread Crumbs
  • 1 tablespoon Butter
  • 1 tablespoon Parsley
  • Salt and pepper to taste
  • Crumble Blue Cheese

Preparation

Step 1

In a saute pan add butter, garlic, parsley and bread crumbs. Cook for a couple minutes until all the ingredients combine.

Cut each cherry tomato in half and fill with some of the bread crumb mixture. Put under the broiler for 2-3 minutes. Take tomatoes out of the oven and top each with a crumble of Blue cheese. Serve immediately.
