Mini BBQ Turkey Meatballs

These Mini BBQ Turkey Meatballs can be used with your favorite pasta, meatball sandwich or alone as appetizer with toothpicks.

Ingredients
- 2 tablespoons olive oil
- 4 tablespoons butter, melted
- 1/2 teaspoon liquid smoke
- 4 teaspoons Rib rub (any brand of BBQ rub)
- 1 pound turkey or chicken
- 1 egg
- 1/2 stalk celery, finely diced
- 3/4 cup bread crumbs
Preparation
Step 1
Preheat oven to 450°F.
Drizzle olive oil into 9x13-inch baking dish and use your hands to evenly coat the entire surface. Set aside.
Melt butter, then add rub and liquid smoke. Whisk until well incorporated. Combine all the ingredients until thoroughly incorporated.
Roll into 3/4-inch balls. Place into baking dish. The meatballs should be touching one another.
Bake 15 to 20 minutes and serve with BBQ sauce.
