Ingredients
- 1 1/2 lb salmon
- 1 chipotle chile in adobo sauce
- 1 clove garlic
- 1 orange, zested and juiced
- 1 lime, zested and juiced
- 2 scallions, sliced and divided
- 1 t cilantro
Preparation
Step 1
Heat oven to 450. Place salmon on rimmed baking sheet coated with olive oil flavored spray. In bowl of food processor, puree chipotle pepper, garlic, ¼ c orange juice and 1 T lime juice 1min or until smooth. Stir in 1 T sliced scallions. Spread chipotle mixture evenly over salmon. Roast 20 mintues or until salmon flakes easily. Top with cilantro, remaining scallions, and 1 T each orange zest and lime zest.
