Peach Bread Pudding

Ingredients

  • 2 c cubed French bread,
  • 2 medium peaches, or 2 c frozen peaches, sliced
  • 1 c skim milk
  • 1/4 c egg beaters
  • 1/4 c peach spreadable fruit
  • 2 T packed brown sugar
  • 1/2 t vanilla
  • Peach or apricot spreadable fruit, if desired

Preparation

Step 1

Heat oven to 350. Spray loaf pan. Toss bread and peaches in pan. Beat milk, egg beaters, melted spreadable fruit, brown sugar, and vanilla with fork in medium bowl until blended. Pour evenly over bread and peaches. Place loaf pan in rectangle pan on oven rack. Pour boiling water in rectangle pan until 1 “ deep. Bake 30-35 minutes or until knife inserted in center comes out clean. Spread additional spreadable fruit over the top for glaze. Cool 10 minutes, but into 4 pieces. Serve warm.
