Cabbage Casserole

Ingredients

  • 2 tsp oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 tsp minced garlic
  • 1 lb lean ground beef
  • 1 can diced tomatoes and chilies as is
  • 8 oz tomato sauce
  • 1/2 c rice, cooked ( I used brown)
  • 1/2 small cabbage head, shredded or chopped coarsely
  • 1/2 c mozz cheese, part skim

Preparation

Step 1

Oven on 350. Spray 9x13 dish.

Saute the onion, peppers, and garlic in the oil. Stir in the tomatoes, sauce and rice.

Bring to a boil and simmer for a few min.
Spread HALF of meat mixture in dish. Top with cabbage, then add rest of meat mixture.

Sprinkle cheese on top.

Cover and bake for 1 hour til bubbly.
