Key Lime Pie

Ingredients

  • PIE CRUST:
  • 1/3 cup sugar
  • 1 stick unsalted butter
  • 1 pinch salt
  • 1 1/2 cup all-purpose flour
  • 2 Tbs all purpose flour (combined with above)
  • 1 x-large egg
  • 1/2 tsp vanilla extract
  • 2 Tbs molasses
  • 1/2 Tbs ground ginger
  • 1/4 tsp ground cinnamon
  • FILLING:
  • 1 can 14oz sweetened condensed milk
  • 1/2 cup key lime juice
  • 4 x-large egg yolks
  • 1 Tbs vanilla extract

Preparation

Step 1

1) For pie crust: Preheat oven to 325%F. In a medium bowl, cream sugar, butter, and salt until smooth. Add flour, egg, vanilla, molasses, ginger, and cinnamon and mix well to form a smooth dough. Roll out dough on a lightly floured surface into a circle about 13 inches wide and 1/4 inch thick. Line tart pan with a removable bottom with dough. Trim excess dough. Bake crust until browned, 12 to 15 minutes.

2) For Filling: In a medium bowl, whisk together all ingredients. Pour into pie shell and bake until filling sets to consistency of a soft custard, about 15 minutes. Cool pie completely on a wire rack.
