Sweet Potato Casserole

Although this has many sweet components, this dish will made a great addition to your holiday feast. Yet easy enough to make, you could enjoy it year round.

Ingredients

  • 5-6 Sweet Potatoes
  • 3/4 cup Dark Brown Sugar
  • 1/2 cup Heavy Cream
  • 1/4 cup Melted Butter
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • Oatmeal Streusel Topping
  • 1/4 cup Rolled Oats
  • 2 Tbsp Dark Brown Sugar
  • 1 Tbsp AP Flour
  • 1/8 tsp Ground Cinnamon
  • 2 Tbsp Cold Butter

Preparation

Step 1

1. Start by placing the sweet potatoes on a baking sheet and put them into a preheated 400 degree oven for 60-70 minutes or until tender. Turning every 15-20 minutes. When the potatoes are cool, scrape out the insides and use an electric mixer on high speed to beat the potatoes until they are mashed and smooth. Measure 6 cups of mashed sweet potatoes into a large bowl.

2. Add the brown sugar, heavy cream, melted butter, cinnamon and salt to the potatoes. Mix well with the beater until well incorporated. Pour mixture into an 8×8 inch baking dish.

3. Set oven to 350 degrees.

4. Make the oatmeal streusel by grinding the rolled oats to a coarse flour by using a food processor or a blender.

5. Combine the oat flour with the brown sugar, four and cinnamon in a small bowl. Cut the cold butter into the dry mixture using a pastry knife or a fork. You should have a crumbly mixture with pea size bits. Sprinkle this mixture over the sweet potatoes. Put in the oven for 50-60 minutes or until the top begins to brown.

6. Remove and let cool. Serve and Enjoy.
