Pesto & Tomato Melts

Ingredients

  • 4 slices white bread, toasted
  • 3/4 cup prepared pesto, divided
  • 8 oz. cherry tomatoes, sliced
  • 1 pkg. (8 oz.) fresh mozzarella cheese, sliced
  • 1 cup sliced arugula

Preparation

Step 1

Heat oven to 400 degrees. Arrange toasted bread on aluminum foil-lined baking sheet. Divide 1/2 cup prepared pesto evenly among toasted bread slices (about 2 Tbl. pesto on each). Divide sliced tomatoes and sliced cheese evenly among pesto-topped bread slices. Drizzle remaining pesto evenly over slices. Season with salt and pepper, if desired. Bake 5 minutes or until heated through and cheese melted. Sprinkle sliced arugula evenly over melts. Arrange on servings platter.
