Apple Cranberry Crumble Muffins

Ingredients

  • Topping:
  • 1/4 cup packed brown sugar
  • 1/4 cup ground almonds
  • 3 tablespoons oats
  • 1/2 teaspoon cinnamon
  • 1 tablespoon melted margarine
  • Combine all ingredients. Mix well.
  • Muffins:
  • 2 1/4 cup all purpose flour
  • 1 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 egg
  • 1 cup plain yogurt
  • 1/2 cup canola oil
  • 2 cups diced, peeled apples
  • 3/4 cup cranberries

Preparation

Step 1

Preheat oven to 375. Combine flour, brown sugar and baking soda in a large bowl. Combine egg, yogurt and oil in a small bowl. Add to the dry ingredients, stirring just until moistened. Stir in apples and cranberries. Spray muffin pan with a non-stick spray. Fill muffin cups with batter. Sprinkle with topping. Bake for about 25 minutes or until tops are firm to touch.
