Pumpkin Raisin Cake

Ingredients

  • Icing:
  • 2 cups sugar
  • 2 cups pumpkin
  • 3/4 cups oil
  • 4 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1 Tablespoon cinnamon
  • 1 teaspoon all spice
  • 8 ounces crushed pineapple - drained
  • 1 cup raisins
  • 1 cup chopped pecans
  • 8 ounces cream cheese
  • 1 stick butter
  • 16 ounces confectioners sugar
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans

Preparation

Step 1

Combine sugar, pumpkin, oil and eggs. Sift dry ingredients. Add dry ingredients to pumpkin mixture. Beat 1 minute at medium speed. Stire in pineapple, raisins, 1 cup chopped pecans, and vanilla. Bake 350 for 55 minutes in 9x13 greased pan.

Icing:
Combine all ingredients. Spread on cooled cake.
