Yam and Jalapeno Soup

Ingredients

  • 3 med yams
  • 3 jalapenos, seeded and minced
  • 1 Tblsp olive oil
  • 5 c. vegetable stock
  • 3/4 c. cream (optional)
  • S & P

Preparation

Step 1

Roast yams in 400 degree oven for 40 minutes. Cool, then peel.
Saute jalapenos in oil for 2 minutes
Puree the yams with some of the stock and add to jalapenos. Add rest of stock and simmer for 20 minutes.
Add cream and season, simmer for 5-10 minutes
