Ingredients
- 3 T light butter
- 1 T evoo
- 1/2 cup chopped onion
- 4 oz. Sliced mushrooms
- 1-2 cloves garlic minced
- 2 T flour
- 2 cups low fat milk
- 1 cup chicken broth
- 1/2 cup white wine
- 4 oz. Non fat cream cheese
- 1 cup grated Romano cheese
- 2 handfuls fresh spinach
- White pepper
- Kosher salt
- 2 T capers
Preparation
Step 1
Cook pasta according to directions. Melt 3 T
Lt butter in a large Dutch oven or skillet. add evoo... Then onions & mushrooms. Until tender...add garlic & sautéed for about 1 min. Add flour and cook for about a minute. Add milk, broth & wine stirring to meld & until starting to thicken. Add cream cheese & Romano cheese stirring until cheese is melted & all is hot. Add tuna or chicken, spinach or peas. & capers & seasonings. Add pasta & serve.
