Ingredients
- 2 cups full fat coconut milk* (must be very cold)
- 1 1/2 cups pumpkin puree
- 1 cup coconut sugar
- 1/2 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- pinch of salt
Preparation
Step 1
Mix coconut milk and pumpkin puree together in a medium bowl. Add remaining ingredients and stir until combined. Pour mixture into ice cream maker. Follow manufactures instructions to make your ice cream.
This recipe makes approximately 1 quart of ice cream.
