Ingredients

  • 1 pound lean beef
  • 2 Tablespoons taco seasoning mix
  • 1 Tablespoon dried parsley
  • 1 Tablespoon cooking oil
  • 1 Cup salsa
  • 1/3 Cup Peach Preserves

Preparation

Step 1

Cut beef in 1” cubes. Combine taco seasoning and parsley; coat beef cubes with seasoning mixture.
Heat oil in heavy skillet over medium-high heat. Add beef, cook and stir to brown, about 5 minutes. Add salsa and preserves to pan, lower heat, cook and simmer until tender, about 15 minutes.
Serve over rice.
