Ingredients
- 2/3 cup shortening
- 1 cup sugar
- 2 eggs
- 1 1/2 cups mashed bananas (4 to 5 med.)
- 1 Tablespoon lemon juice
- 1 teaspoon baking sodat and salt
- 1 1/3 cup unsifted flour
- 1/2 cup chopped dried aricots mixed with 1 tablespoon flour
Preparation
Step 1
Cream shortening and sugar in large bowl
Beat in eggs one at a time
Blend bananas and lemon juice.
Mix flour, baking soda and salt.
Blend into banana mixture
Stir in apricots
Turn into greased and floured 9 x 5 x 3 loaf pan
Bake at 325 degrees for 1 hour and 10 to 20 minutes
Remove from pan
Sift conf. sugar on top if desired
