Ingredients
- For the steak:
- 1 1/4 lb ground beef
- 1/4 cup minced fresh parsley
- 2 Tbsp minced scallions
- 1 tsp kosher salt
- 1/2 tsp pepper
- 2 Tbsp flour
- For the sauce:
- 1 Tbsp olive oil
- 2 cups sliced onions
- 1 tsp sugar
- 1 Tbsp tomato paste
- 2 cups beef broth
- 3/4 tsp kosher salt
- 1/2 tsp dried thyme
- Cheese Toast:
- 4 slices baguette, cut diagonally (1/2" thick)
- 2 Tbsp unsalted butter, softened
- 1/4 cup Mozzarella Cheese
- Shredded Parmesan
Preparation
Step 1
To make steak:
1. Combine ground beef, parsley, scallions, salt and pepper.
2. Divide evenly into 4 portions and shape each into 3/4 to 1" thick oval patties.
3. Place 2 Tbsp flour in a shallow dish; dredge each patty into flour. Reserve remaining flour.
4. Heat oil in a saute pan over medium-high heat.
5. Add patties and saute 3 minutes 3 minutes on each side or until browned. Remove from pan.
6. Add onions and sugar to pan; saute 5 minutes. Stir in tomato paste and cook 1 minute. Sprinkle mixture with remaining flour and cook 1 minute.
7. Stir in broth, salt and thyme.
8. Return meat to pan and bring sauce to a boil.
9. Reduce heat to medium-low, cover and simmer 10 minutes.
10. Serve steaks on Cheese Toast with onion sauce ladled over. Garnish with Parmesan Cheese and parsley and serve.
To make cheese toast:
1. Preheat oven to 400 degrees.
2. Place bread on baking sheet.
3. Combine butter and cheeses and spread over bread.
4. Bake until bread is crisp and cheese is bubbly, 10-15 minutes.
