Seared Lamb Chops w/ mint butter

Ingredients

  • 1 cup chopped shallots
  • 1 tbsp salt
  • 1 tbsp pepper
  • 3 tbsp sugar
  • 1/4 tsp cayenne
  • 3/4 cup bourbon
  • 1 tbsp creme de menthe
  • 2 tbsp lemon juice
  • 1 cup chopped mint
  • 1 lb softened butter

Preparation

Step 1

Melt butter in sauce pan and sweat shallots until clear. Season with salt, pepper, sugar, and cayenne. Add bourbon and allow to reduce to a syrup. Cool. Transfer to mixing bowl and add Creme de menthe, lemon juice, mint and butter. chill.

Grill lamb chips, place a pat of mint butter on each and serve.
