Glazed Peach Pie with Chocolate

Ingredients

  • BOTTOM:
  • 1/2 - 3/4 cup chocolate chips (melted)
  • FILLING:
  • 4 peaches (peeled & sliced)
  • 1 pkg cream cheese (softened)
  • 1/2 cup icing sugar
  • 1/2 tsp almond extract
  • 1/2 cup whipping cream
  • GLAZE:
  • 2 peach (peeled & puree)
  • 1 tsp lemon juice
  • 1/4 tsp cup sugar
  • 4 tsp cornstarch

Preparation

Step 1

Use a baked pie crust.

Melt chocolate and spread in the bottom of cooked pie crust.

Whip cream until stiff. Mix remaining ingredients until well blended. Fold in the whipped cream into cream cheese mixture. Spread evenly over the melted chocolate pie crust. Refrigerate for 1 hour.

Arrange peach slices on top of pie. Spoon the glaze over the peaches evenly and refrigerate for at least 6 hours or overnight.

To make glaze, mix all ingredients and cook over med - low heat until thick. Remove from heat and spread over peaches.
