Mushroom, Beef & Barley Soup

Ingredients

  • 1/2 lb sirloin steak, cut into 1 1/2" pieces
  • 2 tblsp olive oil
  • 1 c. diced onion
  • 1 c. diced carrots
  • 1 12 oz pkg mushrooms, coarsely chopped
  • 1/2 c. uncooked barley
  • 1 10 oz can fat-free, lower sodium beef broth
  • 5 c. water
  • 1 tsp. salt
  • 1/4 tsp pepper
  • 2 c. chopped Swiss chard

Preparation

Step 1

Heat oil in a large pot over med. heat
Add beef & saute until brown
Add onion & carrots, saute 7 min.
Add mushrooms, cook - 8 min.

Add barley, broth, water, S&P, stir to combine
Bring to a boil;
Reduce heat & simmer 40 min. until barley is tender

Stir in Swiss chard, if using

Cook 5 min.
