Squash Casserole

Ingredients

  • 2 lbs yellow squash, chopped
  • 1 onion, chopped
  • 1 can cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 2 eggs, beaten
  • 1 cup seasoned croutons

Preparation

Step 1

Preheat oven to 350
Boil squash 10-15 minutes until tender but still firm. Drain and transfer into casserole dish with sauteed onion. Combine soup, cheese, and eggs; mix well and then pour into dish with squash. Bake for 25 minutes. Remove from oven and sprinkle croutons on top.
