Salad: Roasted tomato

Ingredients

  • 1 pint grape or cherry tomatoes halved
  • 3-4 T olive oil
  • Pinch of kosher salt
  • 2 tsp sugar
  • 3-4 cup cooked black beans ( 2 cans rinsed, and drained)
  • 4 oz feta cheese crumbled
  • Juice and zest of 1lemon
  • 3-4 scallions chopped

Preparation

Step 1

Roast tomatoes, preheat oven to 350. Combine tomatoes, olive oil and salt, toss well. Place on brimmed baking sheet. Bake for about 40 minutes, tossing a few times during baking. Remove, allow to cool. When cool, combine all ingredients. Toss. Serve cool or at room temperature.
