Ingredients
- cooking spray
- 1 C. fresh or frozen corn kernels
- 1 lg. egg white
- 1/4 C. 1% fat cultured buttermilk
- 1 Tbs. minced onion
- 1 Tbs. minced red bell pepper
- 1/8 tsp. dry mustard
- 1/8 tsp. Worcestershire sauce
- 1 Tbs. reduced-fat sharp cheddar cheese
- 1/8 tsp. salt, optional
- freshly ground pepper to taste
Preparation
Step 1
Preheat oven to 375 degrees F. Lightly coat two 6-ounce ramekins with cooking spray.
In a food processor or blender, combine 1/2 cup of the corn with the egg white and buttermilk. Process until smooth. Transfer mixture to a small bowl and add remaining 1/2 cup of corn, onion, bell pepper, mustard, Worcestershire sauce, cheese, salt (if using) and pepper.
Divide mixture between the 2 prepared ramekins. Bake for 20 to 25 minutes, until puffed and set in center. Serve warm.
