Ingredients
- 8 oz. pork tenderloin, cut into thin strips
- 3 tbsp. soy sauce, divided
- 1/2 cup chicken broth
- 1/4 cup dry sherry
- 1 tbsp. cornstarch
- 1 tbsp. honey
- 1 tbsp. tomato paste
- Pinch of black pepper
- 2 tsp. canola oil, divided
- 1 tbsp. each minced fresh garlic and ginger
- 1 1/2 cups fresh or frozen snow peas or green beans
- 1 cup carrot strips - use peeler
- 2 tbsp. sliced scallions
- 2 tsp. sesame seeds
Preparation
Step 1
Combine pork strips and 1 tbsp. soy sauce. Cover and refridgerate while preparing sauce.
Wisk together remaining 2 tbsp. soy sauce, broth, sherry, cornstarch, honey, tomato paste and pepper.
Preheat wok, med-high, Holding wok away from heat, spray with nonstick spray. Return wok to stove top.
Heat 1 tsp. oil in wok. Stirfry 1/2 the pork until cooked through, 2-3 min. Remove and cook remaining pork and remove.
Add remaining 1 tsp. oil to wok. Add ginger, garlic - stir fry 10-15 seconds. Add snow peas, stir fry 2 min. Return pork to wok, add sauce and cook until sauce thickens, 1-2 min.
Serve over brown rice, garnish with scallions and sesame seeds.
