Banana Bread

Ingredients

  • 2 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1-1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt; course salt
  • 1/2 cup Butter; softened
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/3 cup orange juice
  • 3-4 very ripe bananas; mashed
  • 3/4 cup chopped walnuts

Preparation

Step 1

Preheat oven to 350°F. Grease nine inch loaf pan with butter.

In a bowl, combine the flour, baking soda, baking powder and salt. Set
aside.

Prepare the bananas. Peel them and place in a microwave safe bowl.
Microwave them for one minute 30 seconds. They might let off some liquid;
include it. Mash them up and let them cool a bit.

In a large bowl, cream the softened butter until smooth and light. Add the
sugar and continue to mix until it's creamy.

Add the beaten egg and vanilla and mix until lemon colored and fluffy. Add
the orange juice and mix until combined.

Add the flour mixture slowly using a wooden spoon, stirring until just
combined and add the mashed bananas and nuts.

Transfer to the prepared pan and smooth to fit. Bake 60 minutes or until a
toothpick comes out clean. Let it sit for ten minutes in the pan and then
transfer to a wire rack to cool.

Can bake as muffins; reduce cooking time to 25 minutes.
