Ingredients
- 2 large red bell peppers
- 8 slices whole-grain or millet bread
- 1/4 cup reduced-fat mayonnaise
- 4 romaine lettuce leaves (or 8 spinach leaves)
- 8 ounces thinly-sliced skinless roast turkey breast
- 4 thin slices red onion
- 8 large basil leaves (optional)
Preparation
Step 1
Preheat broiler.
Cut bell peppers into quarters; discard stems and seeds. Place peppers, skin-side up, on foil-lined baking sheet. Broil 3 inches from heat for 10 minutes or until skin is blackened. Wrap peppers in foil from baking sheet; let stand 10 minutes. Peel off and discard skin.
Spread 4 bread slices with mayonnaise. Top with lettuce, turkey, onion and basil, if desired. Arrange peppers over basil; top with remaining bread slices.
