Potato-Cheese Soup

Ingredients

  • 2 T butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 T flour
  • 4 cups chicken broth
  • 4-5 medium potatoes - diced into small pieces
  • 1/2 cup milk
  • 8 oz. packaged shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 3/4 tsp. salt
  • pepper

Preparation

Step 1

In large dutch oven, melt butter. Add onion and celery; cook for 6-8 minutes until tender. Add flour; cook, stirring frequently, for 2 minutes. Add chicken stock, stirring to combine.

Add potatoes; bring to a boil then reduce heat and simmer for 10-15 minutes until potatoes are tender. Using a potato masher, mash potatoes to desired consistency. Stir in milk.

Add cheese, and cook until cheese melts. Stir in sour cream and salt.
