Tomato-mozzarella crostini

Ingredients

  • 1 french baguette, cut into 1/2 inch slices
  • 3 tablespoons olive oil
  • 4 garlic cloves, halved
  • 6 plum tomatoes, diced
  • salt and pepper to taste
  • 2 c. mozzarella cheese, shredded
  • 1 bunch of fresh basil, cut into thin strips

Preparation

Step 1

Brush the slices of bread with olive oil and place on baking sheet. Toast under the broiler for about 3 minutes, careful not to burn.

Remove from oven and rub each slice with a garlic halve. Place the tomatoes in a small bowl and drizzle with olive oil. Season with salt and pepper.

Place the crostini on a serving plate. Top each slice with a sprinkle of mozzarella cheese and cover with a spoonful of tomatoes. Garnish with fresh basil.

Refrigerate any leftovers
