Ingredients
- 1/4 butter
- 1/4 cup minced green pepper
- 1/2 lb. fresh mushrooms, sliced
- 1 tbsp. minced onion
- 1 cup choppped celery
- 1/4 cup flour
- 2 cups turkey or chicken broth
- 1 cup light cream or half & half
- 2 tbsp. sherry
- 2 cups cooked turkey or chicken, cubed
- 2 tbsp. chopped pimiento
- 1/2 lb. spaghetti, cooked
- 1/3 grated parmesan
- Parmesan and pimiento strips
Preparation
Step 1
Cook green pepper, mushrooms, onion, and celery in 2 tbsp. butter over low heat for 5 minutes. Remove vegetables to platter. Add 2 more tbsp. butter and whisk in flour to make a rouex. Stir in broth, cream, and sherry. Cook, stirring constantly, till thickened. Reduce flame; cook 10 minutes. Add vegetables, turkey, and pimiento; heat thoroughly. Serve over hot spaghetti with parmesan, parsley, and extra pimiento if desired.
