Luau pork stir-fry

Ingredients

  • 1 tablespoon olive oil
  • 1/2 lb. pork tenderloin, cut into thin bite-sized strips
  • 1/2 cup coconut milk (from 14-oz. can)
  • 1/4 cup crushed pineapple
  • 2 teaspoons lime juice1bag (19 oz) Green Giant® Create a Meal!® frozen stir-fry teriyaki meal starter
  • 1/4 cup chopped macadamia nuts
  • 1/4 cup coconut4cups hot cooked rice

Preparation

Step 1

1 Heat oil in large skillet or wok over medium-high heat until hot. Add pork strips; cook and stir 5 to 6 minutes or until browned.

2 Add coconut milk, pineapple and lime juice; mix well. Reduce heat to low; simmer 3 minutes, stirring occasionally.

3 Add contents of meal starter; mix well. Cook 7 to 10 minutes or until vegetables are crisp-tender and sauce chips are melted, stirring frequently. Stir in nuts and coconut. Serve over rice.
