Charlotte Johnson's Microwaved Divinity Candy

This recipe for divinity is prepared in the microwave, which makes it quicker and easier than preparing the syrup on the stove top, but just as delicious!

Ingredients

  • 1 cup sugar
  • 1/3 cup water
  • 1/3 cup light Karo Syrup
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 teaspoon vanilla flavoring
  • 1/2 cup chopped pecans

Preparation

Step 1

Combine sugar, water, white Karo and salt in a 2 qt mixing bowl. Cover and microwave on high for 5 minutes. Uncover, stir well. Microwave uncovered on high uncovered for 3-5 minutes till hard ball forms when dropped in cold water. Check at 3 minutes to be sure it isn’t turning dark. Cool in bowl.

Meanwhile, beat 2 egg whites until stiff. Pour cooled sugar mixture into egg whites , stirring constantly until it holds its shape (it should be really stiff). Stir in vanilla and nuts.

Drop by teaspoonfuls onto waxed paper.
